The Bok Choy Adventure

I recently saw some bok choy at Trader Joe’s and bought it on a whim. I say a whim because I’ve never actually cooked bok choy before, and, let’s face it — why was bok choy at Trader Joe’s anyways?!

I looked up some recipes, and basically went from there.  I washed the bok choy pretty well, and let it dry on some paper towels.

I sauteed some garlic, and added the bok choy to it for about 3-5 minutes.  To that, I added half a cup of water,  a quarter cup of low sodium soy sauce, and some larger pieces of chopped ginger.  I covered the pot, and let it sit for about 10 more minutes, until the bok choy was wilted.

I went ahead and added some tilapia to the mix, but you could add some shrimp and (brown?) rice to round out the meal.  Good luck!
